We have a new member of staff at Lindy’s Cakes! Marina B has joined the team and is going to be our Customer Advisor Administrator. She will be here every day working from 10am-1pm. Marina brings a wealth of business and customer support knowledge to Lindy’s Cakes. She was recently employed by a well known supermarket chain and in a former, pre-children, life had been involved in Finance.
Marina loves cakes and enjoys making flapjacks with her children…I’ve asked her for the recipe!

i am really stuck here.I have made the bottom tier for a wedding on march 19th and have been feeding it for 6 wks now. top tier is going to be sponge so will be a while before i can make it, problem is how long before its needed can i ice the fruit tier, i know i need to leave it about a week after marzipaning so was hoping to get it done and iced over next couple of weeks, will that be ok?

Regarding the flapjacks, I don’t have a recipe, my children and I grab some ingredients and just keep adding them.
Sometimes they are good, sometimes they aren’t so great and the dogs get a taste!
But we have great fun trying out different ingredients each time. Although a hint of Ginger tastes lovely in them.
I’m learning lots here from you guys on the blog and the rest of Lindy’s team.

You could ice the fruit tier now.
Lindy would put the marzipan on and let it crust over to make it stronger and then the next day decorate with the sugarpaste.

It’s nice to hear of other Marina’s, we don’t have many here in the UK!
Flapjacks are an oat based snack, and can be flavoured with many ingredients. Some shops sell them with chocolate chips, dried fruit, honey plus many more.
I put my oats (for me the bigger the better) in a saucepan with melted butter, add some golden syrup, brown sugar, ginger, and any other ingredients.
I then put them in a tin and bake in the oven until they start to brown.
The quanitites and ingredients change according to what is in the cupboard and also how much the children add to the pan.
Sometimes odd ingredients go in too and as a result the dogs get a sample when its not been so successful!
