Wonky cake class – Students work

“A wonderful bunch of students” was the phrase that Jane, Sally and I felt best described our students on last Friday’s wonky cake course. I was feeling shattered after my full on week  working on my DVDs, but these students were a joy to teach. So thank you everyone who attended. Many of you thought that it would have been good to make the workshop a two day course -… Continue reading

How do I make stencils fit my cake?

I love stencils they are fantastic, so quick and easy to use. I first came across culinary stencils in Florida last year at the ICES convention, I saw them being demonstrated and I’ve been hooked ever since.

The easiest way to use is stencils is on a flat surface, however once you have practised a few times then you can also stencil on the side… Continue reading

Baking Mini Fruit cakes

Contrary to popular opinion, many people do like fruit cake and it’s not just the elderly. Fruit cake is one of my favourite cakes, as it is my 14 year old sons! The secret, I think, is to have a really good recipe – try the one in my books, it often converts people that say they don’t like fruit cake!

I’ve just had a go at… Continue reading

Why do my cakes sink in the middle?

Cakes usually sink when the cake batter is not completely cooked; everyone’s ovens are different so you need to find the optimum baking time for you oven.  Also towards the end of baking test the cake repeatedly to see if it is fully baked. If a skewer inserted into the cake does not come out clean, then bake the cake for a little longer.

However other things can be… Continue reading

DVD interview – Rough cut

There is something a little bizarre about watching yourself over and over again on film!!! But this is exactly what I’ve been doing over the last few days. The interview section is an extra on my DVDs but even so I want it to look right. I must say that after the fourth time of viewing I’m a little fed up with all the “ums” but having listened to the… Continue reading

Novelty cat cake carving class

“I feel really chuffed” and “I’m definitely coming back, I’ve learnt so much” were a couple of the comments from last Fridays novelty cake carving class. For many of the students it was the first time they had ever carved a cake so at first it was all a little daunting….however once I’d showed them in simple steps how it’s done, they were more than eager to get on with… Continue reading

Have you seen our cupcake wrappers?

From the amount of orders we are receiving I know that one of this years ‘must have’ items for any celebration is cupcakes decorated with on trend cupcake wrappers hot from the States.

For those of you not familiar with this fantastic invention, laser cut cupcake wrappers are assembled in seconds. They simply sit neatly around the outside of the cupcake cases, which I think is a… Continue reading

Fashion Cookie workshop

“I really want to stay a couple more hours….I’m having such fun!” was one of the many comments I heard at Friday’s designer cookie class. I always love teaching cookie classes as everyone always enjoys themselves and students are often amazed at what they can create.

Many, but not all, of Friday’s students were new to sugarcraft so I was surprised
