Cupcakes, cupcakes and more cupcakes – they seem to be everywhere I turn!!! I have always made and decorated cupcakes but I first came across cupcakes in large numbers when teaching in Australia last summer. Everywhere I visited seemed to have a cupcake shop just round the corner! On my return to the UK in September my publishers asked me to write another book – and yes, surprise surprise, it… Continue reading

If there is one cake that epitomises Lindy’s work it has to be the Wonky Cake.  Which might just explain why this course is so popular and gets booked up faster than any other course.  It’s a fascinating course to observe. The pace is fast because there is a lot to get through in one workshop day. Oh and the process is very very clever.  You need a lot of… Continue reading

The Christmas Bauble Workshop is fast becoming our most popular Christmas time class.  This course is magical! A round cake in the shape of a Christmas Bauble…’No way’ you say! Well… I’ve seen it being done and these beautiful baubles are  impressive!  The baking is crucial in the process of creating this cake. The cake is made in a specially designed ball tin, thus creating the perfect sphere to cover.

Eight keen students embarked on their introduction to celebration cakes workshop and eight fabulous cakes were created! Lindy got things underway by introducing the students to sugarpaste. She did a taste test of four different makes of sugarpastes to show how they can differ and to see which one the ladies liked the best. She then moved on to the covering of the board with sugarpaste to give a professional finish.

Lindy talked about… Continue reading
